Ingredients:
12-15 dumplings (store-bought or homemade)
1 tablespoon vegetable oil
1 onion, finely chopped
2 cloves garlic, minced
1 tablespoon grated ginger
1 tablespoon curry powder
1 can (400ml) coconut milk
1/2 cup chicken or vegetable broth
1 tablespoon soy sauce (or tamari for gluten-free)
1-2 teaspoons chili paste or chili flakes (adjust to taste)
Fresh spinach or cilantro leaves for garnish
Salt and pepper to taste
Instructions:
Heat vegetable oil in a large pan or skillet over medium heat.
Add the chopped onion and cook for 2-3 minutes until softened.
Add the garlic and ginger, stirring for about 1 minute until fragrant.
Stir in the curry powder and cook for another minute to bring out the spices.
Pour in the coconut milk, chicken or vegetable broth, and soy sauce. Stir to combine.
Add the chili paste or chili flakes and season with salt and pepper to taste. Bring the mixture to a simmer and cook for 5-7 minutes to allow the flavors to meld together.
Carefully add the dumplings to the sauce, making sure they’re fully submerged. Cook for about 10-12 minutes, or until the dumplings are heated through and cooked (if frozen, follow package instructions).
Once the dumplings are cooked, remove the pan from heat. Garnish with fresh spinach or cilantro leaves.
Serve the dumplings in the creamy coconut sauce with rice or noodles for a complete meal.
