Spinach and Cheese Puff Pastry

Ingredients:
1 sheet puff pastry, thawed
2 cups fresh spinach, chopped
1 cup ricotta cheese
1/2 cup mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 egg, beaten (for egg wash)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon sesame seeds (optional, for topping)
Instructions:
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Prepare the filling:
Heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, cooking until softened (about 3-4 minutes).
Add the chopped spinach to the pan and cook until wilted, around 2-3 minutes. Remove from heat and let it cool slightly.
In a bowl, mix the ricotta, mozzarella, and Parmesan cheese. Add the cooled spinach mixture, salt, and pepper. Stir until well combined.
Assemble the pastry:
Roll out the puff pastry on a lightly floured surface. If using a store-bought sheet, cut it into squares or rectangles, depending on your preferred size.
Place a spoonful of the spinach and cheese filling in the center of each pastry square.
Fold the pastry over the filling to create a pocket or rectangle. Seal the edges by pressing with a fork.
