Ingredients
1 lb ground beef
1/2 cup breadcrumbs
1 egg
1/4 cup milk
1/4 cup finely chopped onion
2 cloves garlic, minced
2 tbsp ketchup
1 tbsp Worcestershire sauce
Salt and black pepper
2 lb potatoes, peeled and cubed
4 tbsp butter
1/2 cup warm milk or cream
2 cups beef broth
2 tbsp butter for gravy
2 tbsp flour
Fresh parsley, chopped
Instructions
Preheat the oven to 375°F. In a bowl combine ground beef, breadcrumbs, egg, milk, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix gently and shape into a loaf. Place on a baking dish and bake for about 45–55 minutes until cooked through and nicely glazed.
While the meatloaf cooks, boil the potatoes in salted water until fork tender. Drain, then mash with butter and warm milk or cream until smooth and creamy. Season with salt and pepper.
For the gravy, melt butter in a saucepan over medium heat. Whisk in the flour and cook for a minute until lightly golden. Gradually add beef broth, whisking constantly, and simmer until thickened.
Slice the meatloaf and place it over a bed of mashed potatoes. Spoon the hot gravy generously on top and sprinkle with chopped parsley.
