Avocado Toast with Soft-Boiled Eggs

Ingredients (for 2 toasts)

 

2 slices of bread (sourdough or your favorite)

 

1 ripe avocado

 

2 eggs

 

1 tsp lemon juice

 

Salt, to taste

 

Black pepper + chili flakes (for topping)

 

Instructions

 

Cook the eggs

 

Bring a pot of water to boil.

 

Gently add the eggs and cook for 6–7 minutes for soft-boiled.

 

Remove, cool in cold water, then peel and slice.

 

Prepare the avocado

 

Mash the avocado in a bowl with lemon juice and a pinch of salt.

 

Toast the bread

 

Toast the bread slices until golden and crisp.

 

Assemble

 

Spread mashed avocado over each toast.

 

Layer the sliced eggs on top.

 

Sprinkle with black pepper and chili flakes.
