Beef Barley Soup Recipe:
Ingredients:
1 lb beef stew meat (cut into cubes)
1 cup barley (rinsed)
4 cups beef broth
2 cups water
2 medium carrots (sliced)
1 celery stalk (chopped)
1 onion (chopped)
2 cloves garlic (minced)
1 bay leaf
1 tsp dried thyme
Salt and pepper to taste
2 tbsp olive oil
Instructions:
Cook the beef: In a large pot, heat olive oil over medium-high heat. Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove the beef and set it aside.
Sauté the vegetables: In the same pot, add the onions, garlic, carrots, and celery. Cook for 3-4 minutes until the vegetables are soft.
Simmer the soup: Return the beef to the pot. Add the beef broth, water, barley, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 1 to 1.5 hours, or until the beef is tender and the barley is cooked through.
Adjust seasoning: Taste the soup and adjust seasoning with more salt and pepper if necessary.
Serve: Remove the bay leaf, and ladle the soup into bowls. Serve with a side of warm bread rolls.
