🧂 Ingredients

 

1 (4–6 lb / 2–3 kg) prime rib roast (bone-in or boneless)

2 tbsp olive oil or softened butter

1 tbsp kosher salt

2 tsp black pepper

1 tbsp fresh rosemary, chopped

1 tbsp fresh thyme, chopped

4 garlic cloves, minced

(Optional) 1 tsp onion powder

(Optional) ½ tsp smoked paprika

👨‍🍳 Instructions

 

Prep the Roast

Take the prime rib out of the fridge 1–2 hours before cooking to bring it to room temperature. Pat dry with paper towels for a perfect crust.

 

Season Well

Mix olive oil (or butter) with salt, pepper, garlic, rosemary, thyme, and optional seasonings. Massage the mixture all over the roast until fully coated.

 

Heat the Oven

Preheat your oven to 450°F (230°C).

 

Create the Crust

Place the roast fat-side up on a rack inside a roasting pan. Roast at 450°F (230°C) for 15–20 minutes, until beautifully browned.

 

Roast Slowly

Reduce oven temperature to 325°F (160°C) and continue cooking until desired doneness:

 

🔴 Rare: 120–125°F (49–52°C)

🟣 Medium-Rare: 130–135°F (54–57°C)

🟠 Medium: 140–145°F (60–63°C)

⏰ Typically 1½–2½ hours, depending on roast size.

 

Rest & Relax

Transfer the roast to a cutting board, tent loosely with foil, and let rest for 20–30 minutes to retain juices.
