Ingredients:

4 medium potatoes, peeled and cubed

2 carrots, peeled and sliced

1 cup frozen corn

1/2 cup celery, chopped

1 lb ground beef (or sausage, if preferred)

4 cups chicken broth

1 cup milk (or heavy cream for extra richness)

1/4 cup flour (for thickening)

2 tablespoons butter

Salt and pepper to taste

Optional: Fresh parsley or chives for garnish

Instructions:

Cook the Ground Beef: In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat and set the meat aside.

Prepare the Vegetables: In the same pot, add the chopped carrots, celery, and potatoes. Cook for 5 minutes to soften them slightly.

Add the Broth: Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 15 minutes, or until the vegetables are tender.

Thicken the Soup: In a small pan, melt the butter and whisk in the flour. Cook for 1-2 minutes until it forms a paste. Gradually add some of the soup liquid to this mixture to form a smooth slurry. Then, stir it back into the soup to thicken it.

Add the Milk and Corn: Pour in the milk (or cream for a richer texture) and add the frozen corn. Stir to combine and cook for an additional 5-10 minutes.

Season to Taste: Season the soup with salt and pepper, and let it simmer for a few more minutes to ensure all flavors are combined.

Serve and Garnish: Ladle the soup into bowls and garnish with fresh parsley or chives, if desired.

Enjoy your cozy bowl of Amish Snow Day Soup! Perfect for chilly days and a comforting family meal.
