Healthy Vegetable Soup

 

Recipe Introduction:

This comforting vegetable soup is packed with nutrients and is incredibly soothing for your stomach. It’s a wholesome meal that can be enjoyed day and night, offering both health benefits and great taste. It’s light, hearty, and perfect for a nutritious boost!

 

Ingredients:

 

1 onion, chopped

2 tablespoons olive oil

2 leeks, chopped

2 stalks of celery, chopped

1 carrot, diced

1 red pepper, diced

1 zucchini, diced

2 potatoes, diced

2 garlic cloves, minced

1 chili pepper, minced (optional, for spice)

6 cups vegetable broth or water

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/2 teaspoon turmeric (optional for added color and health benefits)

Fresh parsley, chopped (for garnish)

Instructions:

 

Prepare the ingredients:

Wash and chop all the vegetables: onion, leeks, celery, carrot, red pepper, zucchini, potatoes, garlic, and chili pepper (if using).

Sauté the vegetables:

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until it becomes translucent. Then add the garlic, leeks, celery, and carrot. Continue sautéing for another 5-7 minutes, stirring occasionally.

Add the remaining ingredients:

Add the diced potatoes, zucchini, and red pepper to the pot. Stir everything together. Add the vegetable broth (or water), turmeric, salt, and black pepper. Bring the soup to a boil.

Simmer the soup:

Once the soup is boiling, reduce the heat and let it simmer for 25-30 minutes or until the vegetables are tender. Taste and adjust the seasoning as needed.

Serve:

Once the soup is ready, remove it from the heat and ladle it into bowls. Garnish with freshly chopped parsley.
