🧀 French Onion Soup with Cheesy Onion Toast

This classic French onion soup is rich, comforting, and deeply flavorful, made from slowly caramelized onions simmered in a savory broth. Served with golden, cheesy onion toast on the side, it’s the perfect cozy meal for chilly days or a refined starter for a special dinner.
Ingredients
For the Onion Soup
4 large yellow onions, thinly sliced
2 tbsp butter
1 tbsp olive oil
2 cloves garlic, minced
1 tbsp flour (optional, for slight thickening)
1 liter beef or vegetable broth
120 ml dry white wine (optional but traditional)
1 bay leaf
Salt and black pepper, to taste
For the Cheesy Onion Toast
4 slices rustic bread
1 onion, thinly sliced
Olive oil or butter
Salt & black pepper
Grated cheese (Gruyère, Emmental, or mozzarella)
Instructions
1. Caramelize the Onions (Soup)
In a large pot, heat butter and olive oil over medium heat.
Add sliced onions and a pinch of salt.
Cook slowly for 25–30 minutes, stirring often, until deeply golden and caramelized.
2. Build the Soup
Add garlic and cook 1 minute.
Sprinkle flour (if using), stir well, and cook 1–2 minutes.
Deglaze with white wine and let it reduce slightly.
Add broth and bay leaf. Simmer for 15–20 minutes.
Season with salt and black pepper. Remove bay leaf.
3. Prepare the Cheesy Onion Toast
Lightly toast the bread slices.
Sauté onion slices in olive oil or butter until soft and lightly golden.
Top bread with onions and grated cheese.
Bake at 200°C (390°F) for 8–10 minutes until melted and golden.
4. Serve
Ladle hot soup into bowls.
Serve with the cheesy onion toast on the side or on top.
