This Golden Lemon Anti-Inflammatory Soup is warm, comforting, and naturally nourishing. Made with red lentils, turmeric, garlic, vegetables, and fresh lemon, it’s light yet filling—perfect for supporting digestion and overall wellness. Enjoy it as a soothing lunch or a cozy dinner bowl.

 

🧾 Ingredients

1 cup red lentils, rinsed

1 tbsp olive oil

1 medium onion, finely chopped

3 carrots, sliced

2 stalks celery, sliced

3 cloves garlic, minced

1 tsp ground turmeric

1 tsp ground cumin

½ tsp black pepper

1 bay leaf

4–5 cups vegetable broth

Juice of 1 large lemon (plus slices for serving)

2 tbsp fresh parsley or cilantro, chopped

Salt, to taste

Optional: chili flakes or grated ginger

👩‍🍳 Instructions

Sauté the base

Heat olive oil in a pot over medium heat. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.

Add aromatics & spices

Stir in garlic, turmeric, cumin, black pepper, and bay leaf. Cook for 30 seconds until fragrant.

Simmer

Add red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes, until lentils are tender.

Finish with lemon

Remove bay leaf. Stir in fresh lemon juice and adjust salt to taste.

Serve

Ladle into bowls, garnish with herbs and lemon slices. Add chili flakes if desired.
