Ingredients

 

2 lbs beef stew meat, cut into cubes

1 medium onion, thinly sliced

2 cups mushrooms, sliced (cremini or white mushrooms)

2 cups beef broth

1 cup red wine (optional)

2 tbsp olive oil

2 tbsp butter

1 tbsp flour (for thickening)

2 cloves garlic, minced

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

Fresh parsley for garnish

Instructions

 

Brown the beef: In a large skillet, heat the olive oil over medium-high heat. Add the beef cubes and sear them on all sides until browned. Transfer the browned beef to the slow cooker.

Sauté the vegetables: In the same skillet, melt the butter over medium heat. Add the sliced onions and garlic, cooking for about 3-4 minutes until softened. Add the sliced mushrooms and cook for another 5 minutes, allowing them to release their moisture and become tender.

Deglaze the pan: Pour the red wine (if using) into the skillet, scraping up any brown bits stuck to the pan. Let it simmer for 2-3 minutes, then pour the mixture into the slow cooker with the beef.

Add the broth and seasonings: Pour the beef broth into the slow cooker. Stir in the thyme, rosemary, salt, and pepper. Mix well to combine.

Cook the stew: Cover the slow cooker and cook on low for 6-8 hours, or until the beef is tender and the flavors have melded together.

Thicken the gravy: If you prefer a thicker gravy, mix the flour with a little cold water to form a slurry. Stir the slurry into the stew and cook for an additional 15-20 minutes on high, allowing the gravy to thicken.

Serve: Garnish with freshly chopped parsley before serving. This stew is delicious served over mashed potatoes, rice, or with crusty bread to soak up the flavorful gravy.
