This cheesy baked cauliflower casserole is rich, creamy, and irresistibly comforting. Tender cauliflower florets are smothered in a velvety cheese sauce, then baked until bubbly and golden on top. It’s the perfect side dish or a cozy vegetarian main that even non-cauliflower lovers will enjoy.
🛒 Ingredients
1 large head cauliflower, cut into florets
2 tbsp butter
2 tbsp all-purpose flour
1½ cups milk (warm)
1 cup shredded cheddar cheese
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 cloves garlic, minced
Salt and black pepper, to taste
½ tsp paprika (optional)
Chopped parsley, for garnish
🔥 Instructions
Prepare the Cauliflower
Preheat oven to 375°F (190°C). Steam or boil cauliflower florets for 5–6 minutes until just tender. Drain well and set aside.
Make the Cheese Sauce
In a saucepan over medium heat, melt butter. Stir in flour and cook for 1 minute. Gradually whisk in milk until smooth and thickened. Add garlic, salt, pepper, and paprika. Stir in cheddar and mozzarella until melted and creamy.
Assemble
Place cauliflower in a greased baking dish. Pour cheese sauce evenly over the top. Sprinkle with Parmesan cheese.
Bake
Bake uncovered for 25–30 minutes, or until bubbly and golden brown on top.
Serve
Garnish with chopped parsley and serve warm.
