Introduction:
This Cheesy Vegetable Casserole is the perfect comfort food for any occasion. Packed with tender vegetables like green beans and topped with a melty layer of cheese, it’s a dish that combines warmth, flavor, and richness. It’s great as a side dish for a family dinner or as a main dish for a vegetarian meal. The cheesy topping adds a delicious crunch, making every bite irresistible.

Ingredients:

2 cups of green beans, trimmed and cut into 2-inch pieces
2 cups of mixed vegetables (carrots, peas, corn, etc.)
1 cup of shredded cheddar cheese
1 cup of shredded mozzarella cheese
1 cup of heavy cream
1/2 cup of grated Parmesan cheese
2 tablespoons of butter
1 small onion, chopped
2 cloves of garlic, minced
1 teaspoon of dried thyme
1 teaspoon of dried basil
Salt and pepper to taste
1 tablespoon of all-purpose flour (optional, for thickening)
Instructions:

Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or non-stick spray.
In a large pot, bring water to a boil and blanch the green beans and mixed vegetables for 3-5 minutes. Drain and set aside.
In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until fragrant and softened, about 2 minutes.
Stir in the flour (if using) and cook for an additional minute. Then, slowly add the heavy cream, stirring constantly to avoid lumps. Season with salt, pepper, thyme, and basil. Allow the mixture to simmer for 5 minutes until it thickens slightly.
Add the blanched vegetables into the skillet, mixing them into the creamy sauce. Stir in half of the cheddar and mozzarella cheese.
Transfer the vegetable and cheese mixture into the prepared baking dish, spreading it evenly.
Top with the remaining cheddar and mozzarella cheese, followed by the Parmesan cheese for extra flavor.
Bake in the preheated oven for 20-25 minutes, or until the cheese is golden and bubbly.
Allow the casserole to cool slightly before serving.
