Recipe: Chicken Noodle Soup
Introduction: This homemade chicken noodle soup is a warm and soothing dish, perfect for chilly days or when you need a comforting meal. With tender chicken, hearty vegetables, and soft noodles, it’s a classic soup that’s sure to please everyone.
Ingredients:
1 lb chicken breast (or thighs), boneless and skinless, diced
1 medium onion, chopped
2 cloves garlic, minced
3 medium carrots, peeled and sliced
2 celery stalks, chopped
1 1/2 cups egg noodles (or any pasta of your choice)
6 cups chicken broth (preferably low-sodium)
1 teaspoon dried thyme
1/2 teaspoon dried rosemary (optional)
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley for garnish (optional)
Instructions:
Prepare the Chicken: In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook for 5-7 minutes until browned and cooked through. Remove the chicken from the pot and set aside.
Sauté Vegetables: In the same pot, add the chopped onion, garlic, carrots, and celery. Cook for about 5 minutes until the vegetables start to soften.
Add the Broth and Seasoning: Pour in the chicken broth and add the dried thyme, rosemary, salt, and pepper. Stir to combine.
Cook the Noodles: Bring the soup to a boil, then reduce the heat to a simmer. Add the egg noodles and cook for about 8-10 minutes, or until the noodles are tender.
Add the Chicken: Once the noodles are cooked, add the cooked chicken back into the pot. Stir to combine and cook for another 2-3 minutes to heat the chicken through.
