Creamed Peas on Toast (Depression-Era Comfort Food)

 

Introduction

This humble dish carried families through hard times, and it’s still quietly comforting today. Warm, creamy peas spooned over crisp toast—simple ingredients, filling, and far better than you’d ever expect from something so modest.

 

Ingredients

 

2 cups green peas (fresh or frozen)

2 tablespoons butter

2 tablespoons all-purpose flour

1½ cups milk

Salt and black pepper, to taste

Pinch of nutmeg (optional)

4 slices bread, toasted

Optional: chopped parsley or onion

Instructions

 

Cook peas in lightly salted water until tender; drain and set aside.

In a saucepan, melt butter over medium heat. Stir in flour and cook 1 minute.

Slowly whisk in milk and cook until thick and smooth.

Season with salt, pepper, and nutmeg if using.

Fold peas into the sauce and warm through.

Spoon generously over hot toast and serve immediately
