easy Crockpot Cowboy

Ingredients:

1 pound ground beef or sausage

 

1 medium onion, diced

 

4 medium potatoes, peeled and cubed

 

1 can (15 oz) kidney beans, drained and rinsed

 

1 can (15 oz) diced tomatoes, undrained

 

1 can (15 oz) corn, drained

 

1 cup shredded cheddar cheese

 

1 ½ cups beef broth

 

2 teaspoons garlic powder

 

2 teaspoons smoked paprika

 

1 teaspoon chili powder (optional for spice)

 

Salt and pepper to taste

 

Instructions:

Prepare the Ground Beef:

In a skillet, cook the ground beef and diced onion over medium heat until browned. Drain excess fat.

 

Layer in the Crockpot:

In the Crockpot, layer the cubed potatoes, followed by the cooked ground beef and onions.

 

Add the kidney beans, diced tomatoes, and corn.

 

Season and Add Broth:

Sprinkle garlic powder, smoked paprika, chili powder, salt, and pepper over the layers.

 

Pour the beef broth evenly over the top.

 

Cook:

Cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.

 

Add Cheese:

About 20 minutes before serving, sprinkle the shredded cheddar cheese on top and cover until melted.

 

Serve:

Scoop into bowls and serve hot. Great with cornbread or crusty bread on the side!
