🛒 Ingredients

For the Gluten-Free Wonton Wrappers:

1 cup rice flour

1 cup tapioca flour

2 eggs

1/4 cup water (add more if needed)

Pinch of salt

For the Egg Roll Filling:

1 lb ground pork (or chicken)

1 cup shredded carrots

1 cup shredded cabbage

1/2 cup sliced mushrooms

2 tablespoons gluten-free soy sauce (or tamari)

1 tablespoon sesame oil

1/2 teaspoon garlic powder

1/2 teaspoon ground ginger

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

Cooking oil for frying

Make the Gluten-Free Wonton Wrappers:

In a large mixing bowl, combine the rice flour, tapioca flour, eggs, and a pinch of salt.

Gradually add water, mixing until a dough forms. You may need to adjust the amount of water, adding little by little until the dough is firm but smooth.

Divide the dough into small portions and roll them into small balls. Roll each ball out into a thin, round wrapper about 4-5 inches in diameter. If the dough sticks, lightly dust with rice flour.

Set the wrappers aside, separating them with parchment paper to prevent sticking.

Prepare the Egg Roll Filling:

Heat sesame oil in a large pan over medium-high heat. Add ground pork (or chicken) and cook until browned.

Add shredded carrots, cabbage, and mushrooms. Stir-fry until vegetables soften, about 5 minutes.

Stir in soy sauce, garlic powder, ginger, salt, and pepper. Cook for an additional 2 minutes, ensuring the seasoning is well distributed. Remove from heat and allow the mixture to cool slightly.

Assemble the Egg Rolls:

Take one of your homemade wonton wrappers and place a spoonful of the filling in the center.
