Introduction:

Pickled beets are a vibrant, tangy, and slightly sweet treat that can be enjoyed as a side dish, in salads, or even as a snack on their own. The pickling process enhances the beets’ natural flavors while giving them a zesty kick from the vinegar. This simple recipe is perfect for those who love the earthy taste of beets with a tangy twist. They can be stored in jars, making them easy to keep on hand for when you’re craving a healthy, flavorful snack.

 

Ingredients:

8 medium fresh beets

1 cup vinegar (white or apple cider vinegar works well)

1 cup water

1/2 cup sugar

1 tablespoon salt

1 teaspoon whole peppercorns (optional)

2 cloves garlic, peeled (optional)

Instructions:

Prepare the Beets: Start by washing the beets thoroughly to remove any dirt. Cut off the tops and roots, leaving about 1 inch of the stems. Boil the beets in a large pot of water for about 45-60 minutes, or until they are tender. Once cooked, drain and set aside to cool slightly. Peel the skins off the beets using your hands or a paper towel.

Slice the Beets: After peeling the beets, cut them into slices or wedges, depending on your preference.

Make the Pickling Liquid: In a saucepan, combine vinegar, water, sugar, and salt. Add the optional peppercorns and garlic for extra flavor. Bring the mixture to a boil over medium heat, stirring until the sugar and salt dissolve. Once it reaches a boil, reduce the heat and simmer for 5 minutes.

Pack the Beets: Place the sliced beets into sterilized jars, packing them tightly.

Pour the Pickling Liquid: Carefully pour the hot pickling liquid over the beets in the jars, ensuring the beets are fully submerged. Leave a small amount of space at the top of the jar.

Seal and Store: Seal the jars with lids and let them cool to room temperature. Store the jars in the refrigerator for at least 24 hours before consuming. The beets will taste even better after a few days as they absorb the flavors.
