Potato & Chicken Fillet with Creamy Mushroom Sauce

This dish is a delicious combination of crispy potato patties and a rich, savory chicken and mushroom filling, topped with a creamy sauce. It’s the perfect meal to enjoy for dinner or any special occasion.

 

Ingredients:

For the Potato Patties:

 

2 large eggs

1 kg (2.2 lbs) potatoes

2 onions, chopped

2 medium carrots, grated

5 tbsp (40 g) flour

2 tbsp (30 g) butter

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

For the Chicken & Mushroom Filling:

 

2 chicken fillets, cooked and shredded

1 cup mushrooms, chopped

2 tbsp butter

1/2 cup heavy cream

1/4 cup chicken broth

Salt and pepper to taste

Fresh herbs (optional, for extra flavor)

Instructions:

Make the Potato Patties:

Boil the potatoes: Peel and boil the potatoes until soft. Drain and mash them.

Prepare the mixture: In a large bowl, combine the mashed potatoes, chopped onions, grated carrots, eggs, flour, and butter. Mix well and season with salt and pepper to taste.

Shape the patties: Shape the mixture into round patties.

Cook the patties: In a frying pan, heat some butter or oil and fry the patties until golden and crispy on both sides. Set aside.

Prepare the Chicken & Mushroom Filling:

Cook the mushrooms: In a separate pan, melt butter over medium heat. Add the chopped mushrooms and cook until tender.

Add chicken and sauce: Add the shredded chicken fillets to the pan, followed by the heavy cream, chicken broth, and seasoning. Stir until everything is combined and the sauce is creamy.

Simmer: Let the mixture simmer for a few minutes to thicken.

Assemble the Dish:

Fill the patties: Make a small hole in the center of each potato patty and stuff them with the chicken and mushroom filling.

Serve: Garnish with fresh parsley and serve with extra creamy mushroom sauce on top.
