Ingredients:

 

1 block (14 oz) firm tofu, pressed and cubed

1/4 cup vegan mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon nutritional yeast

1/2 teaspoon turmeric (for color)

1/4 teaspoon garlic powder

Salt and pepper to taste

1/2 cup celery, finely diced

1 tablespoon fresh dill, chopped

2 slices whole grain bread, toasted (optional)

Instructions:

 

Prepare the tofu: Press the tofu to remove excess moisture, then cut it into small cubes.

Mix the dressing: In a large bowl, combine the vegan mayonnaise, Dijon mustard, apple cider vinegar, nutritional yeast, turmeric, garlic powder, salt, and pepper. Stir until smooth.

Combine the tofu: Add the cubed tofu to the dressing and gently mix until all the tofu is coated.

Add the veggies: Stir in the diced celery and chopped dill for added crunch and flavor.

Serve: Spread the tofu egg salad onto toasted bread or enjoy it on its own as a light meal or snack.
