Ingredients:

For the Dough:

2 1/2 cups all-purpose flour

1 tablespoon sugar

1 teaspoon active dry yeast

1/2 cup warm water

1 tablespoon vegetable oil

A pinch of salt

For the Filling:

1 lb ground pork (or chicken, beef, or tofu for a vegetarian version)

1/4 cup chopped onions

1 tablespoon grated ginger

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon oyster sauce (optional for extra flavor)

1/2 teaspoon white pepper

2 tablespoons chopped green onions

1 tablespoon cornstarch (optional, for texture)

For the Topping and Sauce:

2 tablespoons chili paste or chili sauce (adjust to your preferred spice level)

1 tablespoon soy sauce

1 teaspoon sesame oil

1 tablespoon sesame seeds

2 tablespoons chopped green onions (for garnish)

1/2 tablespoon sugar

For Cooking:

2 tablespoons vegetable oil (for pan-frying)

1/4 cup water (for steaming)

Instructions:

Make the Dough:

In a mixing bowl, combine the flour, sugar, yeast, and salt. Add the warm water and vegetable oil. Stir the mixture until a dough forms.

Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rise for 1 hour or until it doubles in size.

Prepare the Filling:

In a large bowl, mix the ground meat, chopped onions, grated ginger, minced garlic, soy sauce, sesame oil, oyster sauce (if using), white pepper, and green onions. Stir well until the filling is well combined.

Add cornstarch if you want the filling to hold together better.

Form the Dumplings:

Once the dough has risen, punch it down and divide it into small, equal-sized pieces (about 12-14).

Roll each piece into a small ball and then flatten it into a small disc. Place a spoonful of the filling in the center of each disc.

Pinch the edges of the dough together to form a pleated bun shape, ensuring that the filling is sealed inside.

Cook the Dumplings:

Heat 2 tablespoons of vegetable oil in a large pan over medium heat.

Add 1/4 cup of water to the pan, cover with a lid, and let the dumplings steam for 5-7 minutes, or until the dough is fully cooked.

Prepare the Topping and Sauce:

In a small bowl, combine the chili paste or sauce, soy sauce, sesame oil, and sugar. Mix well to create the topping sauce.

Drizzle the sauce over the cooked dumplings and sprinkle with sesame seeds and chopped green onions.

Serve:

Carefully transfer the dumplings to a serving plate. Serve immediately while hot, with extra dipping sauce on the side if desired.
